For the Salsa: 1-2 mangos, peeled diced 2 green onions, chopped 1 clove garlic, minced 1-2 Chipotle(smoked jalapeno) peppers, reconstituted and minced 1 lime, juiced 2 tsp. cilantro, chopped 1 tsp. ginger, grated
For the Fish: 2-4 steaks of Halibut, Ahi Tuna or Salmon 2 tsp. soy sauce 2 tsp. olive or canola oil
Fish: Marinate fish in soy sauce until ready to grill or pan fry. If grilling, brush oil onto fish and cook 2-3 minutes per side until firm to the touch. If Ahi Tuna is selected, cook until rare.
Salsa: Boil water and submerge Chipotles for 20 minutes, or until soft. Carefully cut mango slices off pit and then score and cut cubes off skin. Add chopped onion, cilantro, garlic, and ginger. After Chipotles are soft, remove stem, chop and add to mix.
Serve with white rice or a salad.
